Chicken breast en papillote with leeks
For a healthy meal, try this easy chicken breast recipe cooked en papillote with olive oil and leeks. Serve this at your next dinner party.
1. Split the leeks in half and rinse thoroughly.
2. Heat 2 tablespoons of oil in a frying pan. Add the leeks and cook for 5 minutes over high heat and stir-fry with salt and pepper.
3. Preheat the oven at 210°C.
4. Wash, dry and flake the tarragon. Wash and dry the tomatoes then cut them into slices. Brush the lemon, dry, then grate finely to obtain its zest. Squeeze the lemon.
5. Cut 6 sheets of baking paper and divide the leeks, the chicken breasts and tomatoes into portions. Season with salt and pepper. Sprinkle the lemon zest and the tarragon leaves on top. Pour some oil on the chicken breasts.
6. Close up the parcels and place them on a baking tray. Bake for 20 minutes. Serve directly from the parchment parcels.
