Oysters with green apple granita

These tasty oysters with green apple granita are so simple to prepare that you will impress all your guests!

1. Shuck the oysters and remove the flesh from the shells. Poach for 1 minute in a pan with boiling water. Remove from the water to stop the cooking and place in the fridge. Filter the cooking juices through a fine sieve. Wash the shells thoroughly. Squeeze the lime.

2. Prepare the granita: peel and remove the seeds of the apples. Cut into pieces and place in the blender with the spinach leaves. Add the lime juice and half of the oyster brine. Place the mixture in the freezer and scrape every 15 minutes to obtain a granita.

3. Blanch the seaweed for 2 minutes in boiling water, leave to cool and place on a plate. Arrange the oyster shells. Garnish each shell with 1 tablespoon of granita and place the oyster flesh on top. Serve cold.
