Pears, rice and ducle de leche
Here is an easy recipe to prepare an original dessert, pears, rice and dulce de leche. It's a real treat.
1. Cook for about 30 minutes, 50 g of round rice in 50 cl of boiling milk with 50 g of sugar and 1 vanilla bean, split in half.
2. Let cool. Remove the vanilla bean. Stir in 2 tablespoons of mascarpone, mix thoroughly and keep in the fridge.
3. In a saucepan, brown 50 g of brown sugar. Let simmer and pour 100 g of evaporated milk. Stir every 10 minutes. Dulce de leche is ready when it coats the back of the spoon.
4. Crush roughly 16 speculoos. Cut 2 pears in syrup into small cubes. Divide the speculoos into 4 glasses, top with the diced pears, pour 1 tablespoon of dulce de leche and finish with a thick rice pudding layer. Serve chilled
Our baking tip: Pears can be replaced by apples cooked in butter.
