Here is a recipe to make a leek quiche. Light and delicious, it is a perfect starter or main with a green salad on the side.

Ingredients
1. Split the leeks lengthwise and wash them thoroughly, cut into sections.
2. Melt the butter in a pan, add the leeks and cook over low heat for 15 minutes without coloring. Salt and pepper. Preheat the oven to th.7-210°C.
3. Buttered a tart pan and garnish with the dough. Prick with a fork. Divide the leeks onto the tart shell.
4. Whip the cream with the eggs. Salt and pepper. Pour in the mixture over the vegetables. Sprinkle with cheese.
5. Bake for 35 minutes. Serve warm.
