Pork filet mignon with apricots
We love this easy recipe of pork filet mignon with sweet apricots. Perfect dinner meal to end the day.
1. Wash the apricots, cut them in two. Remove the pit and cut them into quarters.
2. Heat oil in a pot and brown the pork on all sides. Add salt, pepper and reduce the heat. Add the apricots, the vegetable stock cube and pour little water on the meat. Drizzle a little honey into the pot. Cover and leave to cook for 25 minutes on low heat.
3. Dissolve the cornstarch in 5 cl cold water. Pour this mixture into the cooking juices and simmer while whisking the sauce until it is thick.
4. Heat a dry pan and toast the flaky almond. Cut the pork into thick slices, divide on 4 plates with the apricots. Sprinkle with the sauce and the almonds. Serve.
