Gnocchi with sun-dried tomatoes and arugula

1. Peel and cook the potatoes for about 20 minutes in boiling salted water. Wash and drain the arugula. Cut the sun-dried tomatoes into strips. Make parmesan shavings.

2. Drain the potatoes and blend into puree. Stir in the flour and egg yolk, salt, pepper and work the mixture to make a soft dough.

3. Floured the worktop. Roll out the dough, cut out pieces, roll into ropes of 1 cm in diameter, then make 2 cm sections and flick pieces off of fork.

4. Immerse in boiling salted water. When gnocchi float to top of boiling water, remove and divide on plates.

5. Drizzle with oil. Sprinkle the arugula, sun-dried tomatoes and parmesan cheese.
