Speculoos cheesecake with pears

1. Cut the butter into pieces and pourinto a mixing bowl Add the speculoos. Blend until you a sandy texture. Place the rectangle moulds on the plates. Spread the speculoos mixture on the bottom and pack well. Keep cool and set aside.

2. Peel the pears and slice in 2 (keep half a pear for decoration). Dice the rest into small cubes. Divide them on top of the speculoos and refrigerate.

3. Separare the whites with the yolks. Whisk the yolks with the powdered sugar until you get a pale mixture. Add the pear liqueur and the cottage cheese. Mix well. Whip the cream into a chantilly and add icing sugar at the end. Fold into the cottage cheese.

4. Whisk the egg whites until stiff peaks and incorporate it into the previous batter. Divide the batter onto the pears.
