Chocolate petit fours

Here is a recipe to make chocolate petits fours. It is a sophisticated dessert that everyone will enjoy.

1. Prepare the ganache. Grate the chocolate in a bowl. Heat the cream, then pour over the chocolate, whisk until smooth. Add the butter cut into strips while beating. Place the chocolate cups on a tray. Pour each with the ganache. Refrigerate.

2. Prepare the mousse. Melt the chocolate in a water bath. Separate the egg whites from the yolks. Pour the chocolate in a bowl. Add the yolks one by one and mix. Whip the cream and sprinkle with icing sugar; when it begins to rise, fold in the melted chocolate.

3. Beat the egg whites until stiff peaks with salt and stir gently into the preparation. Spoon the mousse into a pastry bag and finish to pipe the chocolate cups with the mixture. Put back in the fridge.

4. Prepare the decor. Oiled a sheet of parchment paper. Pour the sugar in a saucepan and heat it over low heat until a caramel amber colour. Add the crushed hazelnuts and toss in all directions to coat the nuts. Pour the caramel on the parchment paper. Allow to harden, then crush. Divide the caramel pieces with the nuts on top. Serve these sweets with coffee.
