Tomato tart with vanilla ice cream

Tart with tomato and vanilla ice cream! A re-interpreted tatin tart recipe that may surprise some…but that is really delicious.

1. Boil and drain the tomatoes to peel them easily. Cut in half and seed. Set aside.

2. Squeeze the lemon juice. Combine with ketchup. Roll out the sortbread pastry dough. Prick with a fork.

3. Preheat the oven to th. 7-210°C. Make a light caramel by adding butter and sugar in a tart pan placed on high heat of the stove. Stir in the lemon ketchup mixture.

4. Remove from heat, arrange the tomatoes in the tart pan, rounded side on the bottom. Cover with the shortbread dough and bake for 35 minutes. Serve with a scoop of ice cream.
