Delicate and flavorful, this sweet quiche with apples will please everyone.

1. Put the flour in a bowl and add the butter into small pieces. Work with your fingertips to get a sandy mixture. Sprinkle with vanilla sugar, make a hole in the center and add 1 egg. Mix and shape a dough ball. Let stand 30 minutes.

2. Rinse the apples, cut in half, remove the core and seeds, and cut into thick slices.

3. Preheat the oven to th. 7-210°C. Butter a tart pan and transfer the pastry dough. Place the apple slices and bake for 10 minutes.

4. Rinse the lemon and grate the zest. Beat the eggs with the remaining sugar. Add the cream and lemon zest. Pour the mixture over the apples and cook for 25 minutes. Serve warm or cold.
