Pineapple spring rolls

1. Wash, dry and thin out mint. Squeeze the lime. Cut pineapple slices into sticks. Cut the avocados in half vertically and take out the pit. Peel and slice. Sprinkle with lime juice. Crush the coriander seeds.

2. Combine the avocado slices, pineapple sticks and mint in a bowl. Lightly salt, sprinkle with sesame oil and crushed coriander.

3. Spread the rice paper rolls on a clean cloth. Moisten with water to soften. Arrange the mixture in the centre. Fold the edges over and roll into a log.

4. Serve immediately with Nuöc Mám sauce and soy sauce.
