Potato pancakes with smoked salmon

Here is a recipe to make delicious potato pancakes with smoked salmon.

  Ingredients

1. Peel 500 g potatoes, cut them into chunks. Simmer in a pan in hot water, drain and pat dry.

2. Pass them through a food mill. Add 3 tablespoons of flour, 4 eggs, 100g skim milk powder, for a fluffy and golden pancake.    

3. In a skillet, drizzle olive oil, and spoon 1 tablespoon of batter. Cook for 3 minutes over low heat on each side. Arrange on plates with 1 slice of smoked salmon.

Our tip: Serve with a mixed green salad, drizzle with olive oil and lemon.
