A simple and tasty preparation that will open your meal in style: a tomato soup subtly flavored with basil.

Ingredients
1. Wash, dry and thin out the basil. Squeeze the lemon. Immerse the tomatoes for 1 minute in boiling water. Refresh under cold water and peel. Cut into pieces and blend.
2. Add the lemon juice, olive oil, vinegar, salt and pepper in the blender and process until a smooth soup. Pour into a bowl and adjust the seasoning. Place in the fridge for at least 1 hour to cool.
3. Divide the tomato soup into 4 bowls, garnish with basil leaves and serve chilled.
