Ingredients
1. Cut the bacon in half down the lengths. Pat dry the scallops with paper towels. Wrap them in the bacon cut in half slices like a mini tournedos. Slip a small sprig of thyme between the scallop and the bacon.
2. With a cookie cutter, cut 18 bread toasts, as large as the scallops.
3. Melt the butter in a skillet and cook one side only of each toast until brown colour.
4. Remove them and and place the scallops wrapped in bacon. Cook over high heat for 1 minute on each side.
5. Place them on the toasted bread side. Add ground pepper and enjoy immediately.
