Crab spring rolls, kiwi and green apple

1. Drain and crumble the crab. Peel and cut kiwis into wedges and the green apple into small sticks.

2. Thin out and chop finely the cilantro leaves. Juice the lemon. Wash and drain the romaine lettuce. Combine lemon juice, fine salt and olive oil to make a vinaigrette dressing.

3. In a bowl, put the meat crab, kiwi wedges, apple sticks, cilantro and add vinaigrette.

4. In the middle of the romaine leaves, place the crab mixture and fold it like a spring roll. Tight with one chive sprig.
