Chocolate fondant with toasted walnuts
Prepare a delicious chocolate cake with toasted nuts.
1. Toast the walnut kernels for 3 minutes in a hot dry pan and let cool on a paper towel.
2. Preheat the oven to 170°C (th. 5/6). Buttered and sprinkle sugar into the pastry circle: place it on a baking sheet lined with parchment paper. Melt the chocolate in a bain-marie.
3. Place the walnut kernels and icing sugar in a food processor and blend for 2 minutes to obtain a fine powder.
4. Mix the softened butter in a large container with the walnut powder, granulated sugar and melted chocolate. Beat the egg whites until stiff with a pinch of salt, stir into the mixture. Pour into the pastry circle, smooth the surface with a metal spatula.
5. Bake the cake for 25 minutes. Remove from the oven and let cool for 15 minutes, then gently peel off the circle passing the blade of a knife. Keep the cake at room temperature until ready to serve.
6. Just before serving, you place the cake in the oven for 5 minutes. Serve with a flavored praline or coffee custard or a hot chocolate sauce.
