Chocolate mousse with pears
This chocolate mousse with pears bring a touch of freshness to the end of your meal. It’s impossible not to love it.
1. To prepare the pears: pour the sugar in a saucepan. Add 40 cl water and the vanilla pod split in half lengthwise. Bring to a boil and boil for 5 minutes.
2. Peel the pears and place them upright in a large saucepan. Pour the syrup and cook for 20 minutes over low heat, basting often the pears. Let cool.
3. Prepare the chocolate mousse: break the chocolate in a saucepan, add the milk. Melt the chocolate over low heat, stirring, until smooth.
Pour into a bowl.
4. Separate the egg whites from the yolks. Add the yolks one by one into the melted chocolate. Beat the egg whites with a pinch of salt. When they are firm, add delicately to the chocolate mixture, uplifting gently not to break the whites.
5. Cut the pears in half, remove the heart and seeds, then cut into strips. Pour the mousse into 6 small porcelain dishes. Divide the pear slices lightly pressing them into the mousse. Refrigerate for 3 hours in the fridge before serving.
