Try your hand at this recipe and prepare mini choux with hazelnut cream. A refined dessert, perfect for a birthday party or buffet.

Ingredients

2. Whisk the egg white until stiff. Add the caster sugar in a saucepan and add a little water for a thick syrup. Bring to a boil. Pour the boiling syrup over the egg whites, whisking until it cools down.
3. Knead the butter with hazelnuts. Fold the whites. Put the mixture into a pastry bag.
4. Cut the choux in half. Pipe with the hazelnut cream, and cover.
5. Mix the icing sugar with crushed ladyfingers. Sprinkle the mini choux with it. Serve on wooden pikes.
