Zucchini purée
This is zucchini purée is flavored with tahini, chili and coriander. Perfect to complement white meat!
1. Preheat oven to th. 6/7 - 200°C. Remove the ends of the zucchini and cut the vegetables in half lengthwise. Peel the garlic. Place the vegetables in an oven dish and bake for 30 minutes.
2. Squeeze the lemon. Thin out and chop coriander. Brown the almonds in a dry nonstick skillet. Once they begin to brown, remove from the pan and let cool.
3. Pour the tahini, lemon juice, zucchini and garlic in the bowl of a mixer. Mix until a fine and smooth purée. Add the chili powder and coriander, salt and pepper. Keep in the fridge and decorate with flaked almonds before serving.
Complement with grilled white meat, roasted or even poached. Bread, of course, and also vegetables.
