Pork filet mignon with eggplants

1. Preheat the oven at 180°C. (th. 6)

2. Cut the pork filet mignon into slices about 3cm thick.

3. Peel the onion and shallots, and chop.

4. In a thick-based pot, fry the onions and shallots with 1 tablespoon of olive oil. Add the slices of pork and brown them. Season with salt and pepper and sprinkle the paprika. Add the bay leaves and the white wine. Leave to simmer over low heat for 15 minutes.

5. Cut the eggplants into fine slices. Brush them with olive oil, salt and thyme. Bake on a tray for 20 minutes.

6. Place 1 slice of pork on each plate and garnish with the eggplant and cover with tomato coulis.
