Broccoli and goat cheese clafoutis

Make this savoury broccoli clafoutis topped with goat cheese.

  Ingredients

1. Chop the broccoli florets: cut coarsely then into smaller pieces.

2. Boil them in salted water for about 2 to 3 minutes. Prick the broccolis to test if they are done.

3. Put the vegetables in cold water to stop the cooking and protect the colour.

4. In a bowl, add 1 teaspoon of cornstarch, break 2 eggs and mix.

5. Then , pour 1 tablespoon pesto, 20 cl liquid cream and season with salt and pepper. Mix them and set aside.

6. Cut the goat cheese into 4. Crumble the thyme on the goat cheese.

7. Add a drop of pesto on to the cheese.

8. For the clafoutis: place the broccoli florets at the bottom of the 4 moulds.

9. Place a little pine nuts. Pour the cream mixture in.

10. Top the moulds with a piece of goat cheese.

11. Bake at 180°C until brown.
