1. Preheat oven to th. 7-210°C.

2. Cut the vanilla pod in half and scrape the beans with the tip of a knife. Put in a bowl. Add honey and oil, and mix with a fork.

3. Melt butter in a skilletCook quail on all sides over high heat. Then place in a baking dish.

4. Peel the clementines and remove wedges. Arrange around the quail.

5. Brush the quail with honey mixture and pour the rest of vanilla honey on clementines. Bake for 20 minutes, basting regularly with cooking juices. Remove from oven and serve immediately.
