Zucchini and goat cheese mille-feuille

Discover an easy and economical recipe for a crispy mille-feuille with zucchini goat cheese.

1.  Wash the zucchini, remove the ends and cut into slices. Steam for 5 minutes. Preheat the oven to th. 7-210°C.

2. With scissors, cut each phyllo dough into 4 squares and brush with melted butter. Cut the goat cheese into slices.

3. Line a parchment paper on the baking sheet and assemble the mille-feuille alternating 2 squares of phyllo dough, sliced zucchini, goat cheese, and pepper only. Repeat the process and finish with by 4 squares of phyllo dough.

4. Bake for 10 minutes. The phyllo sheets should be golden. Serve immediately with mesclun salad.

Our cooking tip: You can replace zucchini by fried eggplant.
