Salmon nems with fresh goat cheese

1. Remove the bones from the salmon, cut into small cubes and place them in a bowl. Crumble over the goat cheese.
2. Wash, dry and chop the chives. Add to the above mixture, salt and pepper. Mix well.
3. Place for one second the rice paper wrappers in cold water and lay out on the working station. Garnish with 1 tablespoon of stuffing, roll up and seal the edges with your fingertips. Repeat with the remaining ingredients.
4. Heat the frying oil, gently dip 2 nems with a slotted spoon and fry until golden brown and crispy. Remove them from the oil, drain on paper towels while you cook and drain the rest. Divide arugula into bowls and place 3 salmon nems on top.
