Bo kho Vietnamese beef

1. Peel and chop the onion and garlic. Wash and remove the first layer of the lemongrass and crush the stems. Cut the meat into cubes of 3-4 cm.

2. In a large bowl, combine the onion, garlic, nuoc-mâm, sugar, five-spice powder and marinate the meat for 30 minutes.

3.  In a large cast-iron pot, add 2 tablespoons of oil and cook beef over high heat. Pour the marinade, tomato paste, star anise and cinnamon. Stir.

4.  Pour the chicken broth, add the crushed stalks lemongrass and salt. Cover and cook on medium heat. For the first broth, reduce heat and cook for 2 hours half covered.

5. Wash, peel and cut the carrots lengthwise. Add to the stew 30 minutes before the end of cooking. Finish cooking without covering.
