1. Peel and rinse the potatoes. Boil them in water for 20 minutes.

2. Wash, dry and chop the herbs. Beat the herbs in a bowl with the heavy cream. Add salt and pepper. Drain the potatoes and leave them to cool before cutting into slices.  Mix the potato slices with the herb cream.

3. Roll out the shortcrust pastry dough and prick with a fork. Cut the dough into 4 discs the diameter of the mould and 4 discs larger than the moulds by 4 cm.

4. Preheat the oven at 210°C. Butter the molds and place the larger disc as the pie's base. Fill the base with the potato mixture and cover the top with the smaller disc.

5. Whisk egg yolk with 1 tablespoon of water. Brush the dough with the egg wash. Seal the pie. Make a small incision at the top of the pie and bake for 30 minutes. Serve with a side of green salad.
