Make an exotic and flavorful passion fruit salad with a sweet meringue.

Ingredients
1. Cut the passion fruit in half and scoop the contents out with a spoon in a bowl. Skin and dice the mango. Combine the 2 fruits, sprinkle vanilla sugar and stir gently.
2. Make the meringue. Beat egg whites, and gradually incorporate 100 g sugar. When it reaches firm peaks, pour the remaining sugar and the vanilla extract. Whisk until smooth, then spoon into a pastry piping bag fit with a plain nozzle.
3. Preheat oven to th7-210°C. Divide the fruit in small baking dishes. Cover nicely with meringue and bake for about 10 minutes, until the meringue is golden. Serve immediately.
