Here is the recipe of an Irish culinary specialty: Irish stew, a lamb stew. You will love this traditional dish.

Ingredients
1. Cut the lamb into pieces. In a pot, cook over high heat on each side with oil.
2. Cut the onions and carrots into quarters, add to meat. Add the broth. Season and simmer over low heat for 2 hours. Halfway through cooking add the potatoes.
3. When the meat is cooked, pour the cooking juice into a pan. Let cool for a few minutes and degrease the broth before pouring it back into the pot with the meat and vegetables with butter, parsley and chives.
Our cooking tip: Serve with a potato pureé with chopped chives.
