These sole fillets with leeks make a perfect starter for a family meal. Simple, but delicious.

General informations
Ingredients
1. Wash the leeks well. Boil in salted water for 15 minutes. Drain and dry.
2. Heat 3 tablespoons of olive oil in a saucepan and fry the leeks for 5 minutes on high heat while stirring. Add salt and pepper.
3. Lightly flour the sole fillets. Heat 2 tablespoons of olive oil with butter in a pan. Place the sole fillets in and cook for 6 minutes on each side. Salt and pepper.
4. Divide the sole fillets and leeks on plates. Pour the lemon juice in the pan and deglaze over high heat. Sprinkle the sole with the cooked lemon juice and sprinkle with freshly ground pepper. Serve immediately.
