Apple and cranberry muffins
These lovely apple muffins with cranberries will pleasantly complement a cup of coffee or a hot chocolate.
1. Heat the amaretto and pour int the cranberries (set aside 2 tablespoons of cranberries for decoration).
2. Melt the butter. Beat the eggs and add the yogurt, powdered sugar, vanilla sugar and melted butter. Mix the flour and baking powder, then incorporate it into the mixture.
3. Slice the apples into quarters, peel and remove the seeds. Cut into small cubes. Chop the nuts (set aside some for decoration).
4. Cut the amaretti biscuits in two. Incorporate the cranberries, apples, nuts and biscuits into the batter.
5. Preheat the oven at 180°C (th. 6). Place 12 paper cups into muffin moulds and pour in the batter. Bake for 30 minutes and check the doneness.
6. Mix the sugar and the almond liqueur. Brush the muffins with it and sprinkle with cranberries and nuts before serving.
