Eggplant and goat cheese skewers

Here is a recipe to make skewers with eggplant with goat cheese.

1. Wash, dry and cut the eggplant stems. Cut them lengthwise into thin slices. Arrange on a baking sheet and brush them with olive oil. Turn them over and brush the other side with oil. Lightly salt and pepper.

2. Cut the goat cheese into thick slices.

3. Heat a cast iron grill and place 3 or 4 slices of eggplant, depending on the size of the grill and then return them almost immediately to grill both sides.

4. Preheat the oven on grill position. Place on each slice of eggplant a slice of goat cheese. Roll on themselves and hold closed with a toothpick. Place on a baking sheet and place in the oven at the highest level for 3-4 minutes, the cheese must be melted. Wash, dry sage and thin out.

5. Place the skewers in a dish and sprinkle with sage leaves. Serve immediately
