Pistachio financiers

Financiers are sweet little treats, make a variant with this pistachio version.

1. Preheat the oven to 180°(th. 6).

2. In a saucepan, brown the butter (it must take a colour and a nutty smell). Let it cool.

3. Beat the egg whites with a whisk until foamy.

4. Add the sifted icing sugar and stir.

5. Stir in the almond powder, flour and food colouring. Mix well.

6. Add the pistachio paste, mix again.

7. Pour in the butter in the preparation through a sieve. Stir until a smooth paste.

8. Fill your moulds (if you do not use silicone molds, buttered and floured them).

9. Bake for about 20 to 25 minutes.

10. Remove the financiers, wait a few minutes before unmoulding and let cool on an oven rack.

11. You can enjoy them like or you can make the icing: melt 50 g of dark chocolate and 20g of butter.
