								<content:encoded><![CDATA[ &#60;p&#62;It is a little too easy to applause, congratulate or even criticize chefs and cooks, but have you ever wondered what their everyday reality is like and ultimately what it takes to become a chef?&#60;/p&#62; &#60;p&#62;With all the culinary TV shows, magazines and Michelin-star restaurants, chefs are now a part of a certain celebrity-like system, leaving us thinking that they are living a fabulous life. And while we admire their cuisine and style - we try to book the best table, with the secret hope that the Chef will be waiving at us - we actually forget the long road and sacrifices they had to go through to achieve this level.&#60;/p&#62; &#60;p&#62;So instead of visiting yet another new &#039;concept restaurant&#039;, this time we made our reservation at &#60;a href=&#34;http://west.ite.edu.sg/soh/SitePages/Chez%20West.aspx?utm_source=rss_feed&#38;#038;utm_medium=link&#38;#038;utm_campaign=unknown&#34; target=&#34;_blank&#34;&#62;Chez West&#60;/a&#62;, the training restaurant of ITE culinary school, and where it all begins.&#60;/p&#62; &#60;p&#62;ITE in collaboration with the prestigious French &#60;strong&#62;Institut Paul Bocuse &#60;/strong&#62;(named after the legendary chef who still remains in charge of the kitchen of his culinary empire) is providing besides the courses, a space for the students to be hands-on in the kitchen and in the restaurant room. It gives them a better understanding of what running a restaurant involves, facing pleasant and difficult guests, handling their requests, and everything in between.&#60;/p&#62; &#60;p&#62;The restaurant prides itself in offering French cuisine and even aspires to be a &#039;fine-dining&#039; experience. 								<content:encoded><![CDATA[ &#60;p&#62;If there is one event I would not have missed this year, it would be chef Cherish&#039;s workshop that was held at&#60;a href=&#34;https://www.tottstore.com/?utm_source=rss_feed&#38;#038;utm_medium=link&#38;#038;utm_campaign=unknown&#34; target=&#34;_blank&#34;&#62; ToTT&#60;/a&#62;.&#60;/p&#62;  &#60;p&#62;Busy in the top notch &#60;a href=&#34;http://www.langhamhotels.com/en/the-langham/london?utm_source=rss_feed&#38;#038;utm_medium=link&#38;#038;utm_campaign=unknown&#34; target=&#34;_blank&#34;&#62;The Langham Hotel &#60;/a&#62;in London, the chef&#039;s visits to Singapore are far and few in between, hence I literally jumped on the occasion to witness her baking prowess as she prepares a genuine traditional English Afternoon Tea.&#60;/p&#62;  &#60;p&#62;&#60;strong&#62;Dedicated to her audience&#60;/strong&#62;&#60;/p&#62; &#60;p&#62;Though we were a tad intimidated initially, it dissipated as soon as we were warmly greeted by the chef with a large smile that was full of kindness. Right from the start, she kept us entertained, nurturing us like a mother even.&#60;/p&#62;  &#60;p&#62;Then, before kicking off the class, &#60;a href=&#34;https://www.facebook.com/pages/Cherish-Finden/753508261387794?utm_source=rss_feed&#38;#038;utm_medium=link&#38;#038;utm_campaign=unknown&#34; target=&#34;_blank&#34;&#62;chef Cherish &#60;/a&#62;stressed on the kitchen basics of safety and hygiene, along with the most important rule: discipline. After all, baking is all about science, chemistry and respecting proportions.&#60;/p&#62;  &#60;p&#62;&#60;strong&#62;A traditional English tea time&#60;/strong&#62;&#60;/p&#62; &#60;p&#62;A bright red strawberry jam with whole fruits was the first recipe we tried our hands on. If you think making jam does not require technique or ingredients, it sure does demand patience. Stirring over low heat, chef Cherish recommends using unripe fruits for a better and more natural taste. She also suggested adding lemon juice to reduce sweetness, enhance flavour and thicken the texture.&#60;/p&#62;  &#60;p&#62;The institutional tea theme would not have been complete without the iconic scones - here they were flavoured with lavender and munake honey. Showing us how to knead the dough, we silently watched the beautiful movements and tried to replicate them back at our station. Chef Cherish warned us not to over knead the dough, but simply to relax or soften it. The food culture is so strong and prominent that it makes it quite hard to keep up with all the festivals, restaurant and bar openings, or guest-chefs visiting the island.&#60;/p&#62;  &#60;p&#62;This time we can thank World Gourmet Summit for bringing a panel of chefs, as diverse as michelin star Christophe Muller to self-proclaimed &#60;a title=&#34;Chef Will Meyrick&#34; href=&#34;http://willmeyrick.com/?utm_source=rss_feed&#38;#038;utm_medium=link&#38;#038;utm_campaign=unknown&#34; target=&#34;_blank&#34;&#62;street food chef Will Meyrick&#60;/a&#62;. The organiser has succeeded in making our decision even harder when it came to picking our favourite events to attend.&#60;/p&#62;  &#60;p&#62;&#60;strong&#62;One of a kind chef&#60;/strong&#62;&#60;/p&#62; &#60;p&#62;The mouth-watering WGS program left us with no doubt when our eyes fell on the name of chef Will Meyrick. Excited by his unique cooking philosophy and constant research to revive lost ingredients and recipes, we headed to &#60;a title=&#34;At Sunrice&#34; href=&#34;http://www.at-sunrice.com/?utm_source=rss_feed&#38;#038;utm_medium=link&#38;#038;utm_campaign=unknown&#34; target=&#34;_blank&#34;&#62;At-Sunrice &#60;/a&#62;culinary school to get our hands-on experience with three of his preferred dishes.&#60;/p&#62;  &#60;p&#62;&#60;strong&#62;Prestigious Scottish seafood&#60;/strong&#62;&#60;/p&#62; &#60;p&#62;For his masterclass, chef Will combined his Scottish roots with the country he fell for over two decades ago, Indonesia, and his love for &#039;&#60;em&#62;warungs&#60;/em&#62;&#039; and premium items. To top off the whole experience, we were given the opportunity to cook with seafood from the chef&#039;s native country, which featured a farmed Scottish salmon, cod and blue lobster. Essentially the kind of seafood that&#8217;s usually served in exclusive restaurants were on trays waiting for us, simple amateurs, to cook them. Yesterday marked the opening of the local food scene&#8217;s equivalent of the Oscars. The prestigious awards ceremony was graced by specially flown-in guest master chefs as well as the who&#8217;s who of the Food &#38; Beverage industry.&#60;/p&#62; &#60;p&#62;Supported by the Singapore Tourism Board, the 14&#60;sup&#62;th&#60;/sup&#62; edition of the Awards of Excellence (AOE) celebrates the pinnacle of the finest culinary stars in Singapore and the region. Over the years, the AOE has played an important role in recognising the very best in the Food &#38; Beverage sector, thus setting a benchmark which in turn has contributed to the industry striving towards even higher levels of excellence.&#60;/p&#62; &#60;p&#62;Some familiar names were up for nominations this year, and it&#8217;s no surprise that the perennial favourites clinched the expected awards. 		<description><![CDATA[For the second time, World Street Food Congress (WSFC) is hitting Singapore’s shores from 8 to 12 April.

This year, the event will see 23 stalls from Singapore, Indonesia, India, Bolivia and the United States, among others.&#60;/p&#62;  &#60;p&#62;The first two days were dedicated to &#8216;Dialogue-Hackathon&#8217; where an esteemed panel discussed and opened the floor to questions pertaining to heritage street food culture. The panel included major players in the industry, such as founder and creator of Makansutra and WSFC, K.F Seetoh; Thailand Iron Chef Ian Kittichai; US Top Chef season 9 Paul Qui, Indonesian celebrity chef William Wongso and many others.&#60;/p&#62;  &#60;p&#62;This year&#8217;s theme says it all - &#8216;engage, empower and entreprise.&#8217; Questions raised include: how can we promote street food to the next generation and expand it to new countries? What challenges do vendors face when attempting to create a continued interest and be successful? The not so conventional congress aims at connecting people, sharing, protecting the culture and spreading it further.&#60;/p&#62;  &#60;p&#62;The allure of this year&#8217;s festival is that, except for 2 returning vendors due to popular demand, all of them are new participants who will be showcasing their skills and adding a piece of their cultural history. Dishes start at SGD4.50 so you can safely feast on a couple without worrying about your wallet!&#60;/p&#62;  &#60;p&#62;Now, if you&#8217;re not sure where to start, we&#8217;d suggest hitting up all of the Indonesian stores since they&#8217;re known for their rich street food culture. In particular go for the mala grilled chicken from Taliwang Bersaudara or the &#60;em&#62;gudeg&#60;/em&#62; from Gudeg Yu Nap that takes 3 days to cook.&#60;/p&#62;  &#60;p&#62;For heritage street dishes, head to Tuck Nyonya Catering that&#8217;s run by a lovely couple. 		<description><![CDATA[Our island state was the first country to host the second edition of the travelling competition. Here are the exciting results from the event! ]]></description>												
								<content:encoded><![CDATA[ &#60;p&#62;Once we got news that the second edition of Gelato World Tour will be kicking off in Singapore, we&#8217;ve been anxiously waiting to get our taste buds tickled. Well, now we did.&#60;/p&#62;  &#60;p&#62;Back in March, sixteen gelato artisans from New Zealand, Australia, Malaysia, Vietnam, Indonesia, Philippines, India, Thailand and Singapore gathered to compete for the coveted title for the best gelato in Asia.&#60;/p&#62;  &#60;p&#62;The voting process was divided into three deciding parts: the technical jury that was presided by chef Justin Quek from restaurant Sky on 57, along with other professionals from the industry; the public participated throughout the three days; and the competitors themselves voted for their peers.&#60;/p&#62;  &#60;p&#62;Each artisan had to introduce, explain and answer questions about their gelato to the technical jury, which was composed of chefs, food journalists and gelato experts. Flavour was the main criteria, alongside structure and density of the texture and of course presentation.&#60;/p&#62;  &#60;p&#62;The organisers were thilled to see that all the contestants had taken the Italian art of gelato and made it their own by incoporating ingredients from their home country.&#60;/p&#62;  &#60;p&#62;Noting that pistachios are one of the most common ingredients in gelato, Valentina Righi, Communication Manager of Caprigiani Group happily exlaimed, &#60;em&#62;&#8216;&#8217;No pistachio this year!&#8217;&#8217;&#60;/em&#62;&#60;/p&#62;  &#60;p&#62;Indeed, all of the participants were eager to enthuse about their choice of ingredients, that ranged from kopi, gula melaka, curcuma, pandan, honey, mango and ube. All of which briliantly summed up the diverse and rich culture of the Asia Pacific region.&#60;/p&#62;  &#60;p&#62;Singapore was well represented with six candidates in the mix, of which some celebrated the little red dot&#8217;s 50th anniversary or the iconic sling cocktail. 								<content:encoded><![CDATA[ &#60;p&#62;Last year, the gourmet festival took place at The Promontory, which provided a great bucolic atmosphere. You could feast on food from one booth to another and take in sights of the beautiful waterfront panorama. So, when we heard that this year&#8217;s Savour was going to hold its fort at F1 Pit building, we were a bit hesitant. Bitumen, really? But as food enthusiasts, off we went to satiate our taste buds.&#60;/p&#62;  &#60;p&#62;Upon reaching the premises, we were quick to forget the venue itself, as our excitement swelled just from trying to agree on where to begin. Curious and impatient, we started off with a tour in the auditorium and made some interesting foodie discoveries. Aside from the demos and cooking classes, we had a scoop from the recent winner of the Asian leg of the World Gelato Tour, &#60;a title=&#34;Momolat Gelato&#34; href=&#34;http://momolato.com/?utm_source=rss_feed&#38;#038;utm_medium=link&#38;#038;utm_campaign=unknown&#34; target=&#34;_blank&#34;&#62;Momolato Gelato&#60;/a&#62;. Then, we took a sip of the exclusive and high-quality liqueurs at Tamborine Mountain Distillery before finally relishing in some &#60;a title=&#34;Marou&#34; href=&#34;http://marouchocolate.com/?utm_source=rss_feed&#38;#038;utm_medium=link&#38;#038;utm_campaign=unknown&#34; target=&#34;_blank&#34;&#62;Marou&#60;/a&#62; chocolates. Produced in Vietnam, the fair trade chocolate brand is one of the few to manufacture from the bean to the bar.&#60;/p&#62;  &#60;p&#62;Afterwards, we headed to Jason&#8217;s market, which occupied the entire second floor of the building. Everything from wine, sake, premium fruits and vegetables from around the world were beautifully arranged, waiting to be picked up by food lovers. There, we also enjoyed listening to the sagely advice from the suppliers themselves.&#60;/p&#62;  &#60;p&#62;Chili peppers from Holland, French fragrant &#60;em&#62;gariguettes&#60;/em&#62; and cheeses - each shelf was eye-catching but for our wallets&#8217; sake, we decided to make our way to the chefs&#8217; and restaurants&#8217; booths. Manufactured in the Cognac region, it has been carefully preserved by four generations of master cellers and is considered as one of the highest-quality cognac on the market. Rightly so.&#60;/p&#62;  &#60;p&#62;&#60;strong&#62;&#60;strong&#62;A timeless legacy&#60;/strong&#62;&#60;/strong&#62;&#60;/p&#62; &#60;p&#62;One of the main and unique characteristics about LOUIS XIII revolves around time. The long-aged precious blend of 1,200 &#60;em&#62;eaux-de-vie &#60;/em&#62;from Grande Champagne ranging between 40 to 100 years, offers in evey sip a piece of history. Every bottle, or rather decanter, is more than just a fine spirit &#8211; it presents an experience and a moment that you have to live to the fullest extent.&#60;/p&#62;  &#60;p&#62;Time comes into the picture once again. A few years after its inception, LOUIS XIII started conquering the world - going from the United States, to India, Singapore and China. The fame of this high quality cognac was quick to spread, and connoisseurs recognised its unique qualities instantly.&#60;/p&#62;  &#60;p&#62;&#60;strong&#62;&#60;strong&#62;140 years of craftsmanship&#60;/strong&#62;&#60;/strong&#62;&#60;/p&#62; &#60;p&#62;This year, R&#233;my Martin celebrates their 140th anniversary with grandeur by reaching out to all decanter holders from around the world for a very exclusive quest. Till 31 March, LOUIS XIII has is on the hunt to unveil the oldest and best tended for decanter. After kicking off the quest in Singapore, the competition has now travelled throughout Malaysia, India and Philippines and on to other parts of the world, giving everyone the chance to take part.&#60;/p&#62;  &#60;p&#62;However, the quest is not as easy as it sounds and even the fortunate owners have to redeem themselves and prove the authenticity of their decanter.&#60;/p&#62;  &#60;p&#62;First, the bottle has to contain at least 50% of its original liquid.
