Rinse with cold water, drain and pat well on paper toweling.&#60;/p&#62; &#60;p&#62;&#60;strong&#62;2.&#60;/strong&#62; Heat oil in a deep fryer to 160&#176;C. Put small batches of potato strips in the basket. Deep fry them for about 5 minutes. When they rise to the surface, the potato strips are ready, still tender with a pale colour.&#60;/p&#62; &#60;p&#62;&#60;strong&#62;3. &#60;/strong&#62;Remove the basket, set the fries aside and let drain on paper towels. Raise heat between each batch, and repeat until all of the potatoes are cooked.&#60;/p&#62; &#60;p&#62;&#60;strong&#62;4.&#60;/strong&#62; For the second deep fry, reheat oil to 180&#176;C. Transfer the potatoes, in small batches, and fry again. Cook until gorlden-brown for about 3 minutes.&#60;/p&#62; &#60;p&#62;&#60;strong&#62;5.&#60;/strong&#62; Drain on paper toweling and sprinkle with fine salt to taste. Cover with cold water, salt and bring to a boil. Cook for 30 minutes. Then drain, rinse under cold water and peel them.&#60;/p&#62; &#60;p&#62;&#60;strong&#62;2.&#60;/strong&#62; Mash the potatoes with a fork or pass them through a food mill. Put the &#60;em&#62;pur&#233;e&#60;/em&#62; in a bowl, add milk and mix. Then combine 50g butter, little by little. Adjust the seasoning. Then sprinkle with breadcrumbs. Set aside.&#60;/p&#62; &#60;p&#62;&#60;strong&#62;3. &#60;/strong&#62;Preheat oven to th. 6/7 - 200 &#176; C. Peel and slice the onions. Rinse, dry and chop dill.
