Homemade nougat
Love nougat? Learn how to make your own from scratch.
1. Preheat the oven at 150°C (th. 5). Spread the dried fruits on a baking sheet and bake for about 10 minutes, until they are roasted. Set aside.
2. Beat the egg whites into stiff peaks with a mixer.
3. During this time, heat the honey in a saucepan over low heat. Then add the sugar, the glucose and 7 cl of water into another pan. Stir constantly each mixture with a wooden spoon. When the honey reaches 140°C (use a cooking thermometer), pour it gradually over the egg whites in the mixing bowl. Do the same for the syrup when it reaches the same temperature. Keep stirring.
4. Add the almonds, the hazelnuts, mixing vigorously with a wooden spoon as it will harden once it cools.
5. Cut 2 squares of unleavened sheets as the size of a large square cutter. Place the first unleavened sheet in a baking sheet then large square cutter. Pour the cooled nougat and smooth with a spatula. Top with the second unleavened sheet.
6. Leave to cool at room temperature and place overnight in the fridge. Before serving cut into bite-sized pieces using a knife heated in hot water.
